No, the wood is not vitrified.
As for wear and marking on the trays, they are designed for intensive professional use. So there won't be any problems there.
As far as the top is concerned, it needs to be maintained in the same way as varnished wooden furniture. In the event of stains, you can use a soft, damp cloth (microfiber type, for example)
